A deep-fried snack made of rice flour, rice namakpare is crisp and crunchy. It is essentially rice fries that can be offered as finger food for young children or as a tasty tea-time snack. The dish is also gluten-free and vegan. The rice namakpare can be air-fried or baked to make it a guilt-free affair. Despite being delicious on its own, Rice Namakpare goes well with any dip of your choosing.
1 cup rice flour
1 cup water
¼ tsp turmeric powder
¼ tsp cumin seeds
½ tsp onion seeds / Kalonji
1 tsp red chili flakes
A small bunch of fresh coriander leaves
1 tbsp oil + for deep frying
Salt to taste
Bring 1 cup of water to a rolling boil in a sauce pan. Add 2 teaspoons of oil, the turmeric powder, cumin seeds, onion seeds, and salt to taste. Stir in the rice flour just before serving. While the saucepan is covered, turn off the flame and wait about five minutes. Add the coriander leaves and chilli flakes when the dough has cooled enough to handle. To ensure there are no lumps and the dough is smooth and flexible, grease your palms and knead the cooked rice dough for 5 minutes. To prevent drying out, take one portion and cover the remaining dough portions with a damp dish towel. It should be rolled out into a sheet that is 1/4 inch thick. Cut the dough into the desired shape, then deep fry it until it is crispy and golden brown on all sides. Take out the fries and place them on a platter lined with tissue paper. Serve hot with your preferred ketchup or dip.
